Master four things — the base ratio, the freeze, the program, and the re-spin — and almost any flavor turns out creamy. Here is how each one works.
How does the Ninja CREAMi actually work?
The Ninja CREAMi and Swirl freeze your base solid, then drive a spinning blade — the “creamerizer” — straight down through the block, shaving the ice into shards fine enough to read as smooth on the tongue. Unlike a traditional churner, which whips air into a chilled liquid, nothing is churned, so texture is decided before you press a button — by what is in the base and how it froze.
1. What is the right CREAMi base ratio?
A good base balances three things: liquid, sweetener, and a little fat or stabilizer. Liquid carries the flavor; sugar lowers the freezing point so the mixture never sets bone-hard; and fat or a stabilizer (a spoon of instant pudding, a little cream cheese, or a pinch of xanthan gum) binds free water so it can’t crystallize into coarse ice.
- Protein ice cream: ~1 cup liquid to 1 scoop protein, plus a couple tablespoons of sugar and a spoon of stabilizer per pint.
- Sorbet: mostly fruit plus a little simple syrup and an acid (lemon or lime) — no dairy needed.
- Richer ice cream: add cream or whole milk; the extra fat means you can skip most stabilizers.
2. Why does the base need a full 24-hour freeze?
Freeze the pint flat and level for a full 24 hours, because the blade can only shave cleanly through a block that set solid and even — a slanted or half-frozen base spins unevenly and comes out icy. A level freezer shelf matters more than people expect: a tilted pint freezes with a sloped surface the blade can’t read cleanly.
3. Which CREAMi program should I use?
Match the program to the base: Ice Cream or Lite Ice Cream for dairy and protein bases, Sorbet for fruit-forward mixes, and Gelato for denser, custard-style bases. The Swirl adds soft-serve programs that dispense directly; when in doubt, start with the lighter setting, because you can always re-spin.
4. Why does the re-spin work?
The re-spin works because a splash of added liquid gives the blade something to emulsify, so the shards from the first pass bind into soft serve instead of staying powdery. A first spin that looks crumbly is normal: a rock-hard, lean block shatters before it can whip.
Low-fat and protein bases come out powdery most often. Add a tablespoon of milk (or water for sorbet) and run the Re-spin program rather than re-running the full cycle, which can over-process and melt the pint.
How do I add mix-ins without pulverizing them?
Use the Mix-In program after the first spin: poke a hole to the bottom of the pint, drop in your chips, cookies, or fruit, and run it so the pieces fold through whole instead of pulverizing.
Why is my CREAMi ice cream icy or crumbly?
Icy or coarse texture means too little sugar or stabilizer, or a base that did not freeze flat for the full 24 hours. Crumbly or powdery texture is the opposite problem — the block was too lean to whip — and a splash of liquid plus a re-spin fixes it.

What is the difference between the Ninja CREAMi and the Ninja Swirl?
The original CREAMi spins a pint you then scoop; the Ninja Swirl does everything the CREAMi does and can also dispense soft serve directly from the machine. The base recipes are the same — the Swirl just adds a soft-serve finish — so every recipe here works on both.
Is a no-cook CREAMi base safe to eat?
